This is a recipe that I created and it is a real hit with my family. I hate having to hunt for obscure ingredients so all of the reicpes that I create have easy to find, every day ingredients.
Wild Rice Pilaf
? cup low fat margarine
1 cup raw wild rice
? cup chopped onion
3 green onions - chopped
2 teaspoons crushed garlic
1 cup fresh sliced mushrooms
? cup red bell pepper and green bell pepper
Sea salt
Coarse ground black pepper
3 cups chicken broth
? cup toasted slivered almonds*
Melt margerine in a large heavy skillet. Saut? wild rice, onion, garlic, peppers and mushrooms until onions are wilted. Add chicken broth. Cover and simmer for 30 to 40 minutes, until rice is tender.
Taste and add salt and pepper. Top with toasted slivered almonds just before serving. |
