arghh I am going crazy!!!
does anyone have any ideas about satisfying sweet surgary cravings without over indulging? I got a bit carried away at christmas at want to lose some weight!

| The sugar in fruit usually helps me! Sometimes with ice cream or whipped cream! In More there is a summer fruit brulee recipe that is great. It is honeydew melon, peaches and sweetened whipped cream! It is a great snack for a sweet tooth! [addsig] |

I have just the thing!!! This is one of my creations. I came up with it to substitute for the commercial snack bars. It has less fat and sugar and more stuff that is good for you. But it tastes wonderful!
CRANBERRY WALNUT BARS
1 ? cups of Splenda or Regular Sugar
? cup brown sugar Splenda or Regular Brown Sugar
? cup softened, light margarine
1 ? tsp. vanilla
3 eggs
3 cups of whole wheat flour
1 ? tsp. baking powder
1 ? tsp. baking soda
? tsp. sea salt
? cup vanilla yogurt
? cup sour cream
1 tsp. nutmeg
? tsp. cinnamon
1 cup walnuts
2 cups cranberries
1 ? cups of Kaschi cereal
Heat over to 325 and line a 13 x 9 inch cake pan with foil. Spray lightly with non stick spray.
Beat the margarine, Splenda and Brown Sugar Splenda, vanilla and eggs. Slowly add the flour, baking powder, baking soda and salt.
Add yogurt, sour cream, nutmeg and cinnamon and mix well.
With a spoon, fold in the walnuts, cranberries and cereal.
Spread into the bottom of the pan and cook in 325 over for about 30 - 40 minutes or until a toothpick inserted in the center comes out clean.
Glaze (optional)
Mix ? powdered sugar, ? teaspoon vanilla and 1 to 2 teaspoons milk until smooth. |

I use Splenda because it is made for cooking. Many other artificial sweeteners have a structure that is more like protein so they are denatured when heated. This causes them to break down and they don't have the same properties as they did prior to cooking (think of what happens to an egg when you heat it).
Splenda is structured more like a carbohydrate and their structure remains the same during heating so that makes it a great choice for cooking. |
